A real Texas BBQ is done on a smoker, not a grill or a MANGAL

A smoker is a cooking device that uses indirect heat, and very little of it, most of the cooking is done by smoke, at low temperature (less then 100c)
המעשנת היא מכשיר בישול שמשתמש במקור חום לא ישיר ומעט מאד חום, הבישול נעשה ע"י העשן בטמפרטורה נמוכה מאד.
There is a main cooking area, like a MANGAL, but the heat doesn't come from underneath, it comes from the fire box on the side,
יש איזור בישול ראשי שנראה כמו מנגל, אבל ללא מקור חום מתחתיו (גחלים) החום מגיע מקופסא קטנה לצד האיזור הזה בתוכה יש את העץ..
once the wood in the fire box is "on fire", the door is closed and the oxygen supply is cut off, the fire dies(and so is the heat) and
smoke is produced, it travels thru a cavity to the cooking area and exits thru the vents ...or a chimney.

Generally speaking the cooking time is 2 hours a kg, per piece and not per load, however there is no such thing as overcooking, the longer it smokes the better it gets. Cooking time can also depend on outside temprature and direct exposure to the sun (not a good thing usualy)
באופן כללי החוק אצבע אומר שתי שעות עישון לכל ק"ג של בשר (זה מתייחס לחתיכה הגדולה ביותר, אם יש לך חתיכה של 3 ק"ג וחתיכה של ק"ג העישון יעשה למשך 6 שעות ולא למשך 8), בכל מיקרה לא קיים המושג "שרוף" או מבושל יתר על המידה, ככל שהבשר יהיה "מעושן" יותר, הוא יהיה טוב יותר.
זמן הבישול תלוי גם בטמפרטורה החיצונית והחשיפה הישירה של המעשנת לשמש (לא דבר רצוי לכשעצמו).

The wood used is very important for good results, around here Mesquite is popular, its a locally grown tree with very deep red color, and gives excellent flavor, however apple and pecan are also very popular, each gives a different flavor,there is room for experimentation here.
