    What is used on the meat is a mix of spices called "bbq seasoning", or rub

    A real Texas BBQ is done on a smoker, not a grill or a MANGAL

    A smoker is a cooking device that uses indirect heat, and very little of it, most of the cooking is done by smoke, at low temperature (less then 100c)

    once the wood in the fire box is "on fire", the door is closed and the oxygen supply is cut off, the fire dies(and so is the heat) and


    smoke is produced, it travels thru a cavity to the cooking area and exits thru the vents ...or a chimney.

    Generally speaking the cooking time is 2 hours a kg, per piece and not per load, however there is no such thing as overcooking, the longer it smokes the better it gets. Cooking time can also depend on outside temprature and direct exposure to the sun (not a good thing usualy)

    The wood used is very important for good results, around here Mesquite is popular, its a locally grown tree with very deep red color, and gives excellent flavor, however apple and pecan are also very popular, each gives a different flavor,there is room for experimentation here.

    ANY kind of meat can be smoked with incredible results.

    however poultry(chicken or turkeys) have to be marinated overnight in a salt brine(water, sea salt, spices), mostly to prevent dryness as the cooking time is longer then beef or pork
